Clément Lavallée Chablis - Chante Merle 2021

A village classified Chablis from a plot of 1.35ha plot of 32 year old vines called Chante Merle.

The pressed grapes are rigorously selected and only the best of the grape juice is used, anything that is not to the required standard is sold.

60% of the wine is aged for around 12 months in oak barrels and the remaining in stainless steel tank with natural yeasts. After assemblage the blend remaining in tanks for an additional nine months.

Gravity is preferred over pumping and the wines are bottled with no fining and no filtration.

Clément works in a very natural and organic way, although not certified organic these are the methods that he employs in the vineyards.
