The Brothers created Dovecote from rich fragrant fruits for a hearty cognac made from eaux-de-vie blended in oak casks and produced from a single area of vineyard. On a hilltop, the plot with the dovecote, this is the ideal exposure for the fruit to reach optimal maturity, and where the clay-limestone soil assimilates water regularly in summer.
