Alcoholic fermentation and natural fermentation with native grape yeasts, without adding sulphites or anything else. No sugar added during its preparation. This wine has not been cold fined or filtered, it’s slight cloudiness in no way affects its taste qualities.

Blend: 70% Pinot Noir, 15% Chardonnay, 15% Meunier, all in 100% Cuvée (Première Presse du Pressoir)

Dosage: 0 g / L of sugar added at disgorgement

Quantities: 1987 bottles

Volatile Acidity = 0.27 g / L, pH = 3.15, “Naturally produced SO2” only 6 mg / L

Nose: Very typical of the Pinot Noirs of Chavot-Courcourt, both buttery and milky but also austere with grey pepper, chalk and small red fruits.

Palate: Extremely vinous and powerful, very rich and fresh at the same time, with a characteristic length of Pinots, a truly particular Wine.
